a roasting pan full of delicious "Rösti", one of Switzerland'ss most iconic dishes. Rösti or hash browns are commonly known all over Switzerland and are served in a endless variety of local recipes mostly with molten cheese, mushrooms, bacon or a fried egg on top. The dish has even lend its name to the language barrier between the french and german speaking parts of Switzerland, thus the dividing line between the two communities is generally known as the Röstigraben (roughly the Rösti canyon).
The ground recipe is very simple: Boil potatoes one day earlier in their skin until they are half cooked, let cool and skin. Then grate the potatoes and fry them in butter until golden on both sides, add sauteed onions or bacon if you fancy.
