Photographer's Note

One of the most ubiquitous food staples of Istanbul is the Donner kebab. Meat is roasted on the open heat and sliced off by giant knives that resemble swords. It is then meticulously placed into the bread ("ekmek" in Turkish) and complemented by various salads and sauces.

I tried to capture the preparation of this quick but delicious staple as the stall owner was getting it ready for me.

PS was used to very light post-processing and B&W conversion.
